Just got back from Engage09! the Encore at the jaw-dropping Wynn Encore in decadent Las Vegas. Truly one of the most amazing hotels I've ever stepped foot in. Stupidly, wickedly over-the-top (and for Sin City, that's saying a mouthful). Rebecca Grinnals and Kathryn Arce, the powerhouses behind Engaging Concepts, have once again out-done themselves and provided a networking conference for luxury wedding professionals that was engaging, fun and provided some moments of intense discussion. All that AND seeing celebrity cake maker Sylvia Weinstock rip up the dance floor with 'Say Yes to the Dress' star Randy Fenoli? Priceless!
In honour of Engage, I was trying to find a cocktail in the event's colour scheme (poppy and concrete) and decided quickly that no one would want to drink a grey cocktail (yuck). This libation is close enough to poppy (if served in a very dark disco) and it is from the Wynn hotel itself (so points for location).
Le Rose
1.5 oz Plymouth Gin
1/2 oz Pama Pomegranate Liquer
1 oz Sense Rose Nectar
1/4 oz freshly squeezed & sieved lemon juice
1/2 oz Rock Candy Syrup
Combine all ingredients into mixing glass with ice. Shake well. Strain into martini glass. Garnish with petal of fresh, organic red rose. Sip and pretend you're sitting poolside, waiting for your massage at the luxurious spa.
